Romancing SaGa 2 has a nice twist on JRPG leveling up in that you're leveling a pool of skills, proficiencies, and global hitpoints instead of a start-to-finish party.

The Star Ocean series (esp. 1 and 2) are pretty neat for that stuff. Your "skills" pool is so big and so varied between characters that it really feels important choosing what to do with each one.

It ultimately isn't that important, but it sure does feel that way throughout play.

I'd also recommend Lunar 1 and 2. Something about those games just makes you want to curl up and enjoy.

Mystic Ark. It's a sequel to The 7th Saga with less brutal difficulty, and far more interaction and story. It's also one of those 'multiple short stories which eventually have reason' games. You are one of a bunch of characters kidnapped from their worlds and turned into a statuette by an unknown force. You break free and take the other statuettes with you, that can be used to summon other party members. It has 7th Saga's 'mirror' for avoiding encounters but you're still gonna have to fight a ton, the encounter rate is the only real downside.

It's a Roguelike with a monster capture/fuse system.
There's a Ps1 version and a Gameboy Color version.
The Japanese version had voice acting.

The text in the English GBC version is more palatable than the Ps1, but you have to suffer the 2 lines of text and GBC graphics. Not that there's much of a story. The significance of "Azure Dreams" is kinda lost in translation. The Japanese title was "Other Life: Azure Dreams".

It's really more of a life sim. The translation kinda misses the point. It keeps saying, you are 15 and old enough to go into the tower. But it's more that 15 in this society is Adulthood, and you're going to make a living the only way you know how, by following in your father's footsteps as a Monster Tamer. Build a home. Get a wife. There's a deliberate scene in the beginning where the MC's father explains that "It's a man's duty is to take care of women."

The game has an entirely different context in Japanese from the cover art alone.

Spiritual Force S.F. is an unusual mechanic, you invest learn points (LP) to build a character's SF and increase his main attribute, but in this game it also empowers party members in the same row and column. It sort of works like an aura. This helps you make up the stat shortcomings of party members in the same row, like low speed.
SF is also needed to learn special skills, once those are learned the ability can still be used even when SF reqirements aren't met due to a change of formation, but the starting postition governs how much the abilities drain the technique resource called IP. Formations can be changed before and during a battle.
On top of all that only 3 out of 9 possible members can receive orders, and at least one of the front members must live or it means instant defeat. Due to all of that the battle system is fairly dynamic and unique, especially in boss battles.

Niji no Silkroad is a RPG for NES where you get no money from battles. Instead all money is earned by buying and selling items. So it's basically a trade sim & JRPG hybrid.

Ogre Battle has the whole Chaos Frame in mind which determines if you can recruit special characters and which ending you get. You don't control units directly, and instead build squads of people of various classes to clash with bad guys.

You can recruit other humans, monsters, and even find special equipment for new attacks and classes. Has a pretty good story to boot and one of the few N64 games that goes heavy on the swearing.

Music is pretty decent too.
