Return To Castle Wolfenstein is still the peak of Wolfenstein, it's somewhat hitscan heavy, but that's true to Wolfenstein 3D, and it's done in a way which works for fast action, a lot like the original, but with added depth and variety. It also has some nice bosses, the completed Super Soldiers are legit FUCKING menacing and difficult to fight on Medium and Hard, especially that time you fight two of them at once, they're so good at killing you that they end up suppressing and flanking you really well.

Sick music and atmosphere, as well.

I also think it has the best mix and variety of Nazi super science and the occult, and just about the right amount of plot and exposition. I feel that TNO was pretty decent, but I also thought 09' was pretty decent, even if both of them have flaws, and are not as good as RTCW (and 09' is particularly flawed). TOB was kind of meh, and TNC sounded so bad that I actually have yet to play it, TYB sounds even worse.
Wolf3D itself has a particular cartoony aesthetic missing from the rest of the series, and I can see why it was moved away from as technology allowed for so much more, but there's honestly aspects of that stuff I miss.

Sega 32X Doom is quite playable, good controls and runs smoothly, though famously the music sucks, also it lacks a bunch of levels. It's like a nice wank that you don't get to finish.
SNES Doom is technically playable, and pretty fucking impressive for the anemic machine and what little the SuperFX chip adds, hell, it even had online multiplayer support. SNES Doom is pretty fucking rough to play though.

SNES Wolfenstein 3D is playable, but even it often suffers poor framerates and very low and chunky resolution graphics. It's also hilariously censored.
Not sure if you'll count it, but a couple of years back, someone made a homebrew port of Wolfenstein 3D for the bare Sega Genesis (no 32X), and it's actually very true to the original PC version, complete with good framerate. It's only the shareware episode, but personally I think that's the best part of Wolf3D, and that the game kind of overstays its welcome after that (certainly with the Nocturnal Missions expansion).

You also have Zero Tolerance on the Sega Genesis, which feels like someone wanted to do a Wolf3D style corridor shooter, but wanted to pay as much attention to detail and show off all the shit they could do with it. As a game it's kind of just ok, but said attention to detail is really quite impressive, and I think it's just about the most advanced first person shooter you could make for a 16-bit home console of the time.
