Tokimeki Memorial but PC version is probably better

Play the first party games first, then check out the Capcom and Konami offerings (except for SotN, play that on PS1), and then the obscure stuff afterward/last. Don't stick to just one genre but play them all. There are a ton of good puzzlers but I only listed the notable exclusives here, truthfully I think Baku Baku and Saturn Bomberman pale in comparison to Hanagumi Taisen Columns and Pukunpa, but that's just me.

The Saturn is a good console, but imo not as good as PS1 or Dreamcast. Despite being very similar to PS1 it's probably closer to N64 in that it has a couple of really solid first party titles and not much else outside of that. There's some fun curiosities on the Japanese side but compared to its actual first party titles (+ the aforementioned Capcom and Konami games) they aren't much to look at. If you like puzzlers there's plenty to enjoy.

Buy the Retro-Bit Saturn controller for the authentic Saturn experience, same with Genesis and the other platforms if you can. Feels much better playing with the controller the games were designed for and not just a random PS/Xbox pad

I went into the Saturn expecting to enjoy it more than PS1, it's not a bad system but definitely no where near as good as PS1 or Dreamcast. It's very weird to see people get hyped for stuff like Virtua Fighter 2, Panzer Dragoon, and Manx TT. Those weren't even my favorite games on it let alone what PS1 has to offer lol. In the end I just preferred SEGA CD for being different enough from PS1 to have its own style and similar enough to Genesis to feel like an actual mainline SEGA console, despite having only around 200 games.
