Most likely the same way as all the others. There's nothing particularly special about "8 chars". There were a bunch of nearly identical parts available with a varying ROM/RAM/segment/IO resources. The eva board could handle them all so you'd guesstimate what resources you needed and target that part and then scale up or down the part/design if needed. For the LCD it was just a matter of how much you could fit on one layer. That game isn't even a lot. The part used has 132 segments. But the SM512 has 200. Shit related.
