Dragon Quest, the Loto trilogy.
If you just want to go straight to the meat of the trilogy, and one of the best RPGs ever made, jump onto Dragon Quest III. You don't need previous knowledge of DQ games since it's the prequel to 1 and 2, but it's actually better if you play all 3 in order. If it has to be just one, make it III. Still one of the finest examples the genre has to offer, to this day.

I'll try to explain what I mean. Post your favorite music that will probably be what you most listen in the whole game, could be an overworld theme, but I don't want to limit this to RPGs with overworld maps, so just think of BGM that will play for most of your adventure, usually it's music that's not quite as exciting as a more location-focused tracks, or fast-paced climax music, but it will get you pumped enough and matches the marching pace of your stroll through the adventure in the game.

IMO this is the perfect "going on an adventure/quest" background music.

Probably my favorite rendition of the Zelda theme too.
It gets you pumped but it's not as adrenaline-infused as Tal Tal Heights, which is pretty fast paced (and makes sense since it's the end game area), but it has some dark undertones in the melody arrangement that I really dig, it also fits my ideal "going on an adventure" sound.

Checked catalogue, no Dragon Quest thread, let's fix that.

I'm about to finish Dragon Quest (Warrior) III on the original NES version now, already got to Zoma, but he killed me because I forgot that I was supposed to use the sphere of light.
Going for another try now. These Putragons and Swordroids are really annoying on the way there.
At any rate, I'm excited I'm finally going to finish this game. It was a long road to walk
