Don't bother trying to do it with s-video adapters, get a Saturn SCART cable and a CSY-2100. Note that this will improve color quality, but your tv will still be upscaling your 240p Saturn games to 480i.

If your CRT supports Component over RCA, you can get an RGB SCART to Component RCA adapter to hook it up. I have a CSY-2100 and it works great for this, though I had to modify it to pass sound through. You can also just get a breakout adapter which also works.

As for HDMI on an LCD (or even an HDCRT), cheap upscalers look like shit. The expensive ($250+) XRGB devices seem to be the most recommended upscalers, but I have a Yamaha AV Receiver that upscales 240p component video from my CSY-2100 like a champ. Doesn't do fake scanlines like the XRGB's do, but I hate fake scanlines and prefer the "emulator" look much better on an LCD.
