S-Video is quite nice on the Dreamcast; Also don't have to worry about patching certain games to reenable 15khz RGB for them(thanks Capcom).

I've got a switch like this: http://www.ebay.com/itm/321404903301 I only have SCART for a single system right now, so I can comment on the quality of it when you have multiple systems hooked up to it, but it's supposedly pretty good.
Bandridge supposedly has a decent automatic switch.
If you want something custom, there's a guy making and selling an 8 system switch here: http://shmups.system11.org/viewtopic.php?f=6&t=50851 for $120.

You won't be able to get RGB from an NTSC Gamecube, only PAL models. Unless you feel like shelling out big bucks for its component cable, you're best off just just settling for S-Video.
Dreamcast will do RGB just fine, and you may want that for the 240p and 480i only games, but the Dreamcast really shines over VGA on a PC monitor; That's really only if you feel like going that route.
NES is probably the only system I wouldn't get RGB for, and that's due to the price.

It really all comes down to how nitpicky you are/want to take the search for video quality. S-Video can look amazing and most people are fine with leaving it there
For example, this is s-video from the Dreamcast; Still likely to move to RGB SCART or VGA eventually though.
