Mega Man 8 had a bunch of exclusive stuff on the Saturn version, but sadly it's still Mega Man 8. Virtua Fighter 1 is supposedly better on 32X and 2 got a weird Genesis demake. A lot of Saturn arcade fighter ports are said to be better because of the RAM expansion cart, but it should be noted that this was only available in Japan and some of those games were available in English on the PS1, like Marvel Super Heroes vs. Street Fighter.

Sonic R for the Saturn is missing a bunch of stuff that was added to the PC release later on including optional weather effects for each course and the ability to play each one during different times of the day. Tony Hawk's Pro Skater 2X had a bunch of really cool exclusive stuff on the Xbox but I can't remember what specifically. Both Aladdin games are decent imo, same with Sparkster. SEGA CD got a lot of really cool enhanced ports like Final Fight with added dialog and CDDA background music. Dreamcast got the better end of the deal with a lot of N64 and PS1 ports like THPS1 and Rayman 2
