It was a toggleable option.

As for SOTE, it's very good in terms of atmosphere and getting the Star Wars "feel", but in terms of gameplay it's very mediocre. The controls and movement are clunky, the combat isn't particularly exhilarating, and the bossfights often degenerate into tedious circle strafe matches (excepting the Giant Dianoga, which remains an interesting and terrifying fight).

I will say though, it's still very memorable, if not for how varied the actual gameplay was, between being on foot, riding a swoop bike, flying a speeder or operating the guns on the Outrider. I'm also thankful the developers gave you a jetpack for half the ground levels, since while it may have been awkward to use, it was still pretty damned fun.

On a side note, I actually replayed the game a few years ago, and something really odd happened. I recall, in my childhood, being really saddened that Dash bites it in the final battle. (when I was like 9 or so I even made a little badly drawn comic fanfiction thing about how he escaped the Skyhook's explosion. I might still have it somewhere...) Now, I'm not sure what causes it, maybe something to do with how many of those silver Rebel tokens you pick up, or maybe it was because I never got a game over in the whole playthrough, but after beating the final level I got a sooper sekrit ending that shows Dash and Leebo escape into hyperspace, with Dash remarking that with the Empire (and the Rebels) believing him dead, he'll have an easy time staying alive. It was really surreal to see the "real" ending so many years later, and to learn that poor old Dash Rendar was actually alive.
