I personally feel like Spyro 1, while having faults of its own, has more of adventure feeling to it. Unlike 2 or 3, you don't have allies, you're only Spyro and Sparx against the Gnorcs, saving Dragons who will either thank you or give you advice. The atmosphere is just so perfect, wherever you go, the music, level design, etc. makes you really feel at home. It gives off a neat vibe, and the levels themselves are composed in such a way that the music fits that area very well. There's a geniune aspect of exploration, even if finding everything can get frustrating. Again, it has faults, like some hard jumps and no real way of knowing where the last few gems on a stage are, but it's got enough to it and is such a great 3D platformer that started off the series.

2/Ripto's Rage/Gateway to Glimmer introduced Hunter and a few others, and was the first instance of minigames and having other objectives to do. It also finally gave Spyro the ability to swim (something he can't do in the first), hover, climb walls, and headsmash. The worlds themselves are also pretty unique, and some even require you returning to them when you eventually gain the ability to go there. The sequel did improve on the controls on 1, along with giving us some fun and memorable quests, along with some difficult challenges here and there. I do like the worlds and music of 1 more, though, but again, either this one or 1 are usually put up there as the best ones.

Honestly, both are really fun, and I would suggest you try them out.
