every 3D model has an Origin Point from wich out it's vertex positions are set.
so if you for example rotate an object it would rotate around this origin point.

It still can be placed wherever you like within the global coordinates ,like player and item models are, but for example most player models also have their own origin point at the bottom between their feet and are build from there upwards.

pic is an example of a quad with 3 different origin points.
center, top and somewhere outside.

for example here ( >>6668118 ) you can see the origin point is also exactly in the middle of the object of the caslte floor.

with the release hyrule field origin point being at the top, where the market is could imply that it actually had a 360 degree surrounding of hyrule field so that this point would then lie in the actual center of the model.
