Alfonzone is a varied mix of GzDoom levels if you wanna see stuff done with 3D floors and slopes, and some use of underwater effects and simple scripts.
For a mod to go with that, there's a lot you could try, in fact the mapset being sliced up into a large set of self-contained minisodes means you could try out a bunch of mods for a few levels each to see what they're like.

Hideous Destructor is a popular one, but the gameplay is all new and has a learning curve, so unless you like the idea of a realistic tactical shooter, except featuring evil demons and supernatural magic (some do, because there's not really anywhere else you can find that), I wouldn't say it's worth looking into.
If you prefer more straightforward and arcadey gameplay, it's likely not going to be fun for you. But maybe you do.

There's Metroid Dreadnaught if you think it'd be cool to convert the gameplay to a mix between Super Metroid and Metroid Prime.

There's a mostly complete GzDoom conversion of the (really) old Edge classic Immoral Conduct : Special Edition (it lacks the AI companions replacing Megaspheres, which fucking sucked anyway, and the by-type kill counter, which wasn't a worthwhile gimmick, also those kind of spoil the maps for you). There's supposed to be someone making a remake of it, but that probably died.

High Noon Drifter is a cool one, has a cowboy theme going, though it has no new monsters, so maybe combine it with Legions Of Bone, which replaces all enemies with spooky scary skeletons.

Accessories To Murder is neat in some ways, it's a little bit like Doodle Broom if you cut out a lot of the bloat (like melee finishers, the shitty gore, the 10 years of spaghetti code, and headshot mechanics), and gave it a cool makeover, though it has its own flaws.

Descent Into Heresy is a mod for Heretic which replaces all the weapons with Quake ones, if you like the sound of that.

Demonsteele is a DMC-like gameplay mod. I haven't played it, but I've been told it's good.
