Maybe try skill 1 pistol-starts no-saves on each map.

Preacher.wad is another good one to try on skill 1 pistol starts no saves, though I dunno how its difficulty compares to Valiant.

Base Ganymede is a good noob-friendly megawad. I haven't tried it on skill 3 but on skill 4 there's barely any health so you can get punished hard if you exit a map on low health if not doing pistol starts, but it's a Doom 1 megawad so it's only limited to the Doom 1 bestiary

Base Ganymede is such a comfy wad. I don't make maps, but when I do, I'm gonna learn from these maps: the long levels are linear enough so you never get lost, but non-linear enough so that you have numerous options on where to go and it doesn't feel like a corridor-shooter.
