Suckin' Grits on Route 666 has some really beautiful levels. RR's hires textures are really good when you know what to do with them. You don't even need overcomplicated detailing or architecture for them to look good.

Just finished playing it. The add-on is a lot more consistent than the original game, and more fun too as they tend to design the levels and gameplay with the game's flaws in mind to try and reduce those flaws as much as possible.
Every level is interesting in some way, however, i'd say the very best maps are in the original game nonetheless.

I'll play Rides Again in Arkansas next.
