First three launch attempts failed on Falcon 1. Each time, it was a different issue, and they fixed the problem.

Launch 1 was a corroded nut that failed in the first-stage engine. (It was their first demonstration of a flyback rocket: the debris landed in their machine shop.) This was with the Merlin 1A engine, which used ablative cooling, and therefore could only undergo limited testing before actual use. They responded by starting to develop a regeneratively-cooled engine, which could undergo extensive testing, and be reused without major refurbishing.

Launch 2 used the same Merlin 1A, and this time the booster worked, but there was a rough stage separation, which damaged the upper stage

Launch 3 was their first flight with the regeneratively-cooled Merlin 1C. The booster worked again, and the upper stage separated smoothly, but after separation, the booster rammed the upper stage.

Since then, they haven't had a launch failure. These (and the fourth Falcon 1 launch, which worked) were all development flights, like the maiden flights of the Falcon 9 and Falcon 9 1.1.

It wasn't so much a matter of poor reliability as a matter of their development process involving testing by flying. Everyone has some surprises during development.

As for engineering environment, I've heard it is more like a silicon valley startup than an aerospace contractor: informal, perks like free snacks, but long hours are expected and lots of folks burn out. No cutting corners, but they do design for low cost rather than maximum performance. Russia is where all the QC faults and cutting corners is happening.

There isn't really anything you can call "performance" on a launch vehicle, though.

Normally, "performance" would mean something like speed or maneuverability, but all launch vehicles have to go to orbital speed and none of them are maneuverable in any meaningful sense.

There's just the amount of payload you can get through the atmosphere and up to a certain speed. But on other types of vehicles, that would be called "capacity" not "performance".

And SpaceX is certainly not aiming for low capacity. The Falcon Heavy will be roughly twice as powerful as the next nearest competitor, except for the SLS, if that ever gets done.

Other things where you could make meaningful cost/"performance" tradeoffs in a launch vehicle are also hard to find. A high failure rate is too costly to accept: you get nothing out of building the rocket and you destroy a satellite costing tens or hundreds of millions of dollars. So there's no money to save there, so SpaceX makes things as reliable as possible. The labor is the most expensive thing, so using cheaper, inferior materials just means you're making inefficient use of your expensive labor, and losing valuable capacity. So SpaceX uses state-of-the-art materials and gets the best mass ratio.

As for the engines, there are two measures of performance: specific impulse and thrust-to-weight ratio, and there's a tradeoff between them. SpaceX gets the best thrust-to-weight ratio, which is part of why they can build the biggest rocket.

I'd say for a whole launch vehicle, there isn't such a thing as "performance" which you can sacrifice. The launch business is only about cost, capacity, reliability, and schedule. Getting inflexible ideas about how they should be achieved, like by maxing out specific impulse or minimizing liftoff mass, is just bad engineering, not engineering for performance.
