It doesn't take a big change all at once. Just change one thing at a time. Substitute processed grains with whole grains (oatmeal is an excellent breakfast, add in raisins/craisins and honey to make it tasty), substitute processed snacks (chips, pretzels, etc) with fruit, dried fruit and nuts, incorporate at least one serving of spinach and carrots every day, shift from red meat to skinless chicken and fish.
I've personally noticed less fatigue through the day, especially mornings and after meals. Better shits, more focus, more motivation to take care of myself in other ways through exercise, hygiene, and sleep.

Also, for spinach I highly recommend buying frozen over fresh. It's dirt cheap, has more nutrients, and you can just microwave the packs. Adding a little lemon or lime juice will drastically bring down the bitterness.
