Even if you understand the internals of the system, if it is sufficiently chaotic and has an insane amount of degrees of freedom, statistics is still a great tool for analysis. You may understand the dynamics of kinematics, collisions, and energy, but when you go to explain thermodynamic behavior you are forced into providing an aggregate description using statistics. There are many more examples of chaotic systems with a very large number of interacting subsystems that would also be best handled using statistical methods.

You are correct that the dynamics are also very important. It's usually the first step in describing such complex systems. But understanding the behavior of a single particle does not immediately give you a description of black body radiation. Statistics is not an alternative to dynamic analysis. It's very necessary in many such cases.
