I take it neither of you have ever made beer or wine before. The fermentation process off gases a relatively small amount of CO2 but that is it. If they do ferment it under pressure as some commercial brewers do, it's general under 20 PSI and they would probably put in a blow off valve or similar to stop it from building any higher. My guess is that they'll just keep it at one bar so they can compare it to the pressure on Earth.

Apparently the ISS has a pressurized volume of 32,333 cubic feet and a 5 gallon bucket of beer fermenting would put out around 30 cubic feet of CO2. I'm pretty sure their scrubbers can handle it since that amount is near equal to a person staying aboard for three days.
