it's basically impossible to kill a creature like that quickly and still keep the meat intact. mammals die shortly after losing blood pressure, oxygen, or trauma to the brain. these creatures do not, but they probably don't feel pain quite the same as we do. who knows. if you can come up with a quick way to do it, i'm all ears because i don't like to see animals suffer, but boiling head-first in super-hot water might be the quickest way to klll them.

Depends on the fish though. Sturgeons have similar plates to vertebrates.
Your skin is just an enclosure of finite flexible plates.

What matters here is the brain capacity though. Some animals are dumber than fish.

Femanon here! It tastes different depending on what he's eaten and how thick he releases it.

At it's best it's a bit sweet and rather pleasant with a springy texture to it, like a overcooked noodle sorta.
More commonly it is a pretty non-descript tasteless variant that isn't too different in consistency and flavor to your own saliva with a bit of mucus in it.
At worst, fortunately rarely, it tastes towards the salty and mildly disgusting not unsimilar to how your own perspiration tastes during a heavy workout if it gets into your mouth.
