no one in the ancient world since the time of the greeks believed in a flat earth.
for example in the library of alexandria you could even find the work of aristarchus who believed in a heliocentric model including elliptical orbits.
ptolemy thought that occams razor meant that epicycles and geocentrism were more simple than elliptical orbits since circles are simpler than ellipses, but he knew of both models.

Because the distance they're measuring isn't great enough. The curvature is very gradual, and Earth is very massive.
The Sun is better measure, why? Because it is at an extremely great distance, even in Flattard lore, allowing you to accurately measure the curvature, even crudely.
