Why should I think it is? My senses tell me it
is obviously flat and nobody has ever shown
otherwise.

Because the distance they're measuring isn't great enough. The curvature is very gradual, and Earth is very massive.
The Sun is better measure, why? Because it is at an extremely great distance, even in Flattard lore, allowing you to accurately measure the curvature, even crudely.
