You're making the mistake of lumping all fats together. There's many types of saturated and unsaturated fatty acids, and the composition will change depending on the source. Dairy fat, for example, has been correlated with a lower risk of cardiovascular disease. That doesn't mean I'd eat tablespoons of butter, I'd rather just drink whole milk and get other nutrients, but a little butter on your veggies is fine.

All saturated fats are a mixture of fatty acids, yes, and dairy fat is still a high mix of lauric and myristic acids. A study can find "lower cardiovascular disease" correlating with dairy if it's a poorly designed observational study but feeding experiments show that dairy and especially butter obviously raise LDL cholesterol and thereby increase heart disease risk.

No. Foods are all broken down into the same macro and micronutrients when digested, they just contain them in different ratios. If I eat one cookie I haven't "damaged" myself and made my health bar go down or some shit. Just like if I eat 20 chicken breasts I haven't made myself healthier.

When that cookie is digested, your body has to break down and transport the sugars and fats and deal with whatever metabolic effects those cause. This leads to gradual wear and tear. Other foods have nutrients and chemicals that help mitigate the damage caused by digestion and may even stay in the blood helping the body in other ways, aiding our bodily processes, stimulating our organs, or providing antioxidant support.
