There is a relatively simple solution to the gravity issue - take two Starships, attach them to by the nose by ~500 m kevlar tether, and spin them. The nose is already built strong enough for this & has attachment points, since it is hauled up by a crane to the launch tower anyways, and spinning it fast enough for even .5 g would solve all sorts of issues.
