They never would have launched two shuttles at once except as an emergency rescue mission, especially after Columbia, and they were only designed for short duration flights of about 2 weeks.
Could they have fit? Maybe, but NASA is so touchy about anything being near ISS that again, it would only have been done as an emergency rescue mission.
