So, your best option is probably Jami, it is open source and peer-to-peer.

Open source is a must for anything that is to be considered "secure". You need the right to inspect the source code in order to know what the software is actually doing to your device, as that is exactly what differentiates secure (privacy-respecting) from insecure (privacy-denying) software. Software like Jami (FOSS, Free and Open Source Software) are mostly free too, both as in free ber and free speech, and the latter is important. That means it grants you the freedom to study the source code, modify it and redistribute under, usually, the same license. And mostly, invites people who are interested in the particular program to help develop and maintain it, by inspecting, modifying and submitting the code. The owner of the project is the one who decides what goes and what does not.
Peer-to-peer means that your messages go from your device directly to the other anon's device, not passing by any server. Theretically, once you delete something on your side of the conversation, it disappears in the other side too. There are no backups in the cloud, your data is truly yours by being present only on your device.
Apps like telegram have the client-side being open source, which would make it a good app considering what's listed above, but there is one single thing: messages from your device, to their servers, and from that, to the recipient's device. That's not a good thing. The server-side is not open source, and even if it was, it'd be hard to be sure whether they are using the exact code they show you or something silly instead. Jami is also e2e encrypted I'm pretty sure.

Your other, maybe more convenient option, is Signal. Also open source, it is good too although I'm not exactly sure about how messages are sent, as it is not peer-to-peer. A lot of normies will be migrating to it since Elon Musk's last tweet.
