They could have a rotating section on the passenger decks that spins at 1G. The inner parts can be walk through, or part of the rotating thing for low g applications and the outer rim is where you put your rim on the bowl. The centrifugal force just slingshots the shit into the space if you don't want to save it for fertilizer on mars.
