Why not space? Bring forth a new era of exploration. Even 95% of the earth's oceans are unexplored and that's not even accounting for the inner crust of the earth. I'd say exploration would also be a top priority alongside anti aging studies.

just graduated in ME this spring and I did very well both academically and career-wise

programming is very useful and knowledge of MATLAB will save you potential headaches too. you can easily learn these during your summer, but take your time and have fun.

also just learning about the department where you'll be studying will put you ahead of the game as well. for example; what design related extracurricular activities can you participate in and when? any interesting research opportunities related to stuff you're interested in? career centers to take advantage of? you may not delve too deeply into any of these during your first semester, but it would behoove you to become savvy of them.

when it comes time to look for internships (sophomore/junior summer), it can be very overwhelming and competitive. however, if you start building your resume early it will become MUCH easier to find one and subsequently a job upon graduation. however, I went to a mediocre state school and even my peers in ME who didn't get internships still managed to find jobs before graduating, just make sure you keep at least a 3.0 GPA.

one thing I can't emphasize enough is that... it's your time. use it wisely, and don't be afraid to just ask for things. the worst someone (employer, professor, etc.) can say is 'no', I can't tell you how many opportunities I've made for myself because I just walked into someone's fucking office and asked. hell, one of my buddies worked for an engineering company for 3 years while he was at uni because he just walked into their door wearing a suit and resume in hand and asked for an interview. he now works there full time.

lastly, don't discount professors. what's great about research in engineering is that A LOT of funding/opportunities come from industrial sponsors who are in need of having R&D problems solved. professors who have successful track records will have many connections, trying undergrad research may be useful for experience and networking.

OP, if you do not get an internship within the next summer, then you need to expand your search to smaller companies. they will pay less and make you do more tasks, but you get to learn more.

there's a lot of small companies that dont have job listing pages or HR and they may be more difficult to find and more difficult to determine their hiring needs, but the worse that could happen is that they tell you they need more experience.
