In the proposal they explicitly state they use a second starship to return to lunar orbit/ gateway.

IIRC the starship HLS isn't intended to ever return to earth and I'm not sure if the plan is for it to be refueled at gateway or if it's replaced with a different HLS for the next artemis mission
But if it is replaced this would be an efficient way of recycling the HLS after it expends it's available fuel.
