So even as a kid, I knew that these books...kinda sucked. I realized that I didn't give a fuck about the story or characters, but I was just in it for the dragons. Is there a series with cool, intelligent, good-guy dragons that's actually, well, good?

Try out the Temeraire series by Naomi Novik. I'll be the first to admit, even as a fan of the series, that the books are a bit unconventional in their pacing, but if you're looking for a series with dragons as actual characters and not simply villains or forces of nature, they do a good job. There's a fair bit of humor as well, in that some dragons' views of the world contrast pretty greatly with that of humanity (which becomes pretty important later on). Several different cultures and their interactions with dragons appear as well.

It's sorta like historical fiction with dragons.

You sound like you have similar interests to my own, and I loved them. So take from that what you will. You can get the first three books in an omnibus volume.
