I am probably too stupid for literature.
I enjoy short stories by Roald Dahl but anything with deeper message or some metaphors or symbolism goes over my head

Read more and you'll begin to pick it up.

Metaphors are usually easy to identify, you can look up its definition and some examples of metaphor and you'll start noticing it all the time while you read.

Symbolism is more difficult to identify, sometimes some symbolism in books can go completely unnoticed, but you will get better at recognizing with more reading. There's also an interpretative element of symbolism, which requires you to be creative in how you think a piece of literature is trying to create a more abstract theme.

You're not too stupid for literature, I assure you. Just don't start with insane stuff like Infinite Jest and Blood Meridian while expecting to understand it immediately. I would recommend Hemingway and Vonnegut as good authors for getting into literature.
