I'm pretty sure that because of her contract with the publisher, she legally can't change the actual texts. I know Lucas had a special opportunity to make changes to his movies for later releases. The best JKR can do (and regularly does) is make changes to the context of certain things, or "clarify" the history of certain characters to match contemporary politics. Things like who certain characters were fucking decades before the events of HP that really aren't worth mentioning other than to virtue signal.
