as for novels, i remember liking dream quest of unknown kadath which is a full blown fantasy novel that takes place in a dream world accessed by certain spooky rites where there is zany shit like a land of ghouls and bones, plus a city of cats

His shorter stories are usually not very good, with the exception of Polaris, The White Ship and The Music of Erich Zann. There may be other ones I can't recall.
Other than that, you can read his most popular works.
The Call of Cthulhu is his most famous work, and you can start there.
After that? The Color out of Space, The Shadow out of Time, The Dunwich Horror, At The Mountains of Madness and The Dream-Quest like >>19700856 mentioned. Those are some of his most famous stories, so if you really feel like reading the guy, familiarizing yourself with these is not a bad idea.

Honestly I just bought his complete fictional works and read them chronologically, worked out fine.
The introductory paragraphs of Dream-Quest form the most important and cherished passage of any literature in my life--the ending a close second.
