How do I build the necessary vocabulary to understand essays?
Why can't academiafags just write like normal people? I am pretty sure that a lot of times the guy they wrote an essay about would criticize their bloated phrasing and choice of words.

Get good. Go find a pub with scholars. Drink with them. Read more theory. Read more journal articles. Read the seminal works.

Literally by reading. Your subconscious mind picks up on context through reading and words enter your vocabulary naturally.
Way to indirectly admit that you dont read.

They need to invent a need for their existence and grasping for authority. That's their entire mentality. It shouldn't be too hard though, it's not like the language and what it is communicating is actually more advanced than what you already know. Just a somewhat tiresome register. Pay attention and piece it together. Read more and look up words. The real trouble is that most academics just suck at writing and that's something you can't get around.
