Because they are interested in ideas, modes of thinking/analysis, different viewpoints, they are actively seeking concepts and notions to shine a new light on existing problems or uncover new ones.
Your accusations show that you're a bugmen, incapable of assocviative thinking. Continentals are not believing that Freud and Lacan (as your examples) said the Truth, but they simply find use for their concepts. When a continental philosopher takes up the concepts of some previous philosopher they don't go "A said X is true, so I take this as an axiom", but they'll go "B said Y is true, but what this actually shows is Z".
