Not a book but the Modest Mouse album Lonesome Crowded West has the death of the dream that is open range, cowboys, infinite prairie, etc, as a central theme.

As poetry it's pretty interesting.

Really great book on the wild west..One of my favorites. Doesn't paint Native Americans as some lump some agrarian culture wronged by white men, but tackles the nuance of the evolving landscape.
