What is writing a novel like? How difficult is it?

It's easier if you're a narcissist.

it's easy if you don't give a shit

It’s difficult at first. You’ll be able to write stories at a faster pace, the more you write.
For instance the first book I wrote took me a couple of months. I was able to write my 5th book in 13 days. Both of these books were about 50K words in length.
TL:DR is that practice makes perfect.

Writing is easy, making people read your works is mildly difficult, making people pay for your works is very difficult, and writing what you enjoy while getting paid for it is extremely difficult (unless you're talented).

Like committing an hour or two to writing on one project every day. It's not that bad. It's like you sit down and pick up on the idea you left off on, and then just improvise that for an hour or two, and wherever you leave off you start at tomorrow. You don't have to plan everything out, you'll find order as you go. A lot of great novelists who do their first draft like that.

It's not hard to write a novel. It's hard to write a good novel.
