Get yourself a clean journal, and storyboard and plan out what goes in which chapter. If you start writing haphazardly, you'll lose track. It's best to keep an outline that keeps you in check. Like

How many events go in:
Chapter 1: Event 1, 2, and 3
Chapter 2: Event 1, 2, and 3

And keep another side journal off the side to jot down other ideas to save for later. As for the actual writing of the 50,000 words, once you have an outline, then you have something to work with.

How do I outline a novel and pad scenes to reach 50-80k words? Every chapter should be like 2-3k words, right?

Chapters don't have to be 2-3k each, you can write them shorter to expect to fill them in later. I usually write a "wireframe" of chapters where I could go back and in editing add another thousand or so of filler/exposition. To me, the most important part of this is to get the plot moving in a cohearant diretion, flowery prose can wait for later.
