I've never seen Dickens referred to as a 'European' before. We English don't tend to see ourselves in that light, and we use 'European' usually in the sense of meaning the continent, though I suspect it has a different meaning to you Americans. In the sense of being separated from the continent, Dickens is probably one of the least 'European' English writers possible. Most of his influences were English, and although he set some parts of his novels in foreign countries, they are generally heavily focused on London and English culture, and of course America with Martin Chuzzlewit. He also, unlike Eliot or Thackeray, never included any foreign words in his work, and was also one of the 19th century's notable advocates for linguistic purism. Basically, I think Dickens is quintessentially 'Anglo' and closer to American writers than he is to other European writers.

Literature became a marketable product in the west before it did in other parts of the world, so it has a longer tradition in that regard. Also, we rarely see what is happening in literature outside of our own market so we are pretty biased to make universal judgement in that regard.

It's not defensive, you're projecting. The answer to Europeans industrializing first is like the answer to which scientist discovered gravity. The most it can reveal is a correlate. If you're interested in proving gravity or going past it (focusing on the individual as a foundation of truth doesn't allow it to go past the individual) then you ignore the person or people. If you're interested in the service industry evolution or what may come past it you need to focus on the ideas and those ideas can come from any culture.
You get stuck if your basis of truth is so derivative. Assuming you're a nationalist, you can wonder why Europeans went head-deep into the service industry and liberalism while China stayed out of it. Assuming you see that as a dead end you have a contradictive narrative which is just a headache. Humans don't predicate progress, reality does.

The English and the French are the only people who have had consistently good output since the fall of Rome. Italy and Spain peaked early whereas other European countries were late bloomers.
