So should I read every single one of the Platonian dialogs? Honestly some of them that I've read so far, like Euthyphron felt really useless/unsatisfying.

They are discussing questions which rarely have definitive answers. Even formulating Euthyphro Dilemma makes a genius, to solve it it will take an ultragenius.
