each gospel portrays Jesus from a specific standpoint:

Matthew is his identity as KING, where he is called Lord far more often, his specific Messianic claims are detailed, and more details of the Kingdom (which was rejected) are given.

Mark portrays his life as God's SERVANT, and many descriptions of his work are given, succinctly and quickly. He is called Lord only twice.

Luke is a portrayal of the perfect MAN, praying to God, glorifying him, and depending on him, with many references to his interactions with sinners, women, and the unique parables and actions here are related to going beyond national prejudice.

John is the story of Jesus as GOD, specifically God as the covenant God, Yahveh, not just the creator and redeemer. Here he speaks directly to God, rather than prays, and is described as being God in a number of ways. The fact that this gospel is considered to not be 'synoptic' is because of this special purpose it serves, and not for some other made up reason.

What I recommend next is Romans, which is the book which describes the doctrinal foundation of salvation itself. Psalms are also a good choice.

Acts, and personally I'd recommend reading Galatians early on (and preferably more than once). If you can manage reading from three parts at once, go through (most) of the OT in order, go through the Psalms, and go through the NT in order. No matter what order you go in, save Revelation for last, it's the most complicated and you'll want to make sure you have everything else read first so you can catch all the references.
