For his fiction it is worthy going beyond Story of the Eye. Madame Edwarda and My Mother are his best erotic fictions imo. After that Blue of Noon is worth it as well. I wouldn't start with The Impossible (and L'Abbé C i haven't read).
For his theory, I'd recommend starting with "The Notion of Expenditure" and then The Accursed Share (Vol. 1). The collection Visions of Excess is also quite good, which collects a lot of his early essays (on base matter, fascism, Acéphale). His Summa Atheologica (Inner Experience, Guilty, On Nietzsche) is more difficult, given that it takes a more fragmentary, diaristic form, though also one of the more rewarding.

My Mother starts out really well but drops off pretty hard once the mommy is actually gone and Hansi takes her place.
I guess Bat eye felt the same since he didn't finish the story. Up to that point its pretty great though.

I might be wrong, but I have the feeling that - while it might run through the whole of his work - Bataille doesn't use the term "limit-experience" all too much, at least not as a key word that he defines somewhere. I suspect it's more the influence of Foucault, in his "Preface to Transgression" (and Blanchot in The Infinite Conversation) that have given importance to this term as a key concept in Bataille's oeuvre.

Any kind. If you read about sissy hypno, the whole purpose is to create a dissociative disorder, to dissolve the ego through "mindbreak" or all-consuming lust/desire. They also explicitly want to "lower your IQ", with purported effects of totally forgetting what happened, preferably near a pack of men to abuse your body while in trance.
If you like Bataile, you either haven't realized that the limit experiences he speaks of are dependent on the fetish economy OR you are totally fine with sissy hypno.
And if "postmodernism" is to be viewed as a coherent concept, Bataille is to be viewed as its father. You could argue sissy hypno is currently synonymous with postmodern sexuality.
