How can God be eternal? Who created Him? If nothing did, then how does He exist? What is the nothingness besides God that some gnostics speak of? Why is God? How can a soul be eternal if it was created at some point in time? How can there be evil in the world if God is omnipotent? What is eternity? I try to understand religious literature but it just makes my brainlet brain hurt.

Eternal means uncreated. Nothing created God, He's always existed because his existence is necessary. Souls are immortal, not eternal, because they are not uncreated. Evil exists because of free will. Nothingness isn't real. Basic theology, dumb dumb.

Your soul belongs to God and exists forever.
God is neccessary because he sustains all being and without God there is nothing to ground anything in, and you end up with nothing.
Free will exists because its neccessary for man to become the result of his deeds and choices. Without freedom you couldnt be good or evil, you are just a cog in the machine. With freedom you become an agent and you choices will tell who you choose to be, and as such your character is made.
Nothingness doesn't exist, as such it's not real because it's a non-entity.
