What books would help me understand the insane death cult that is the catholic church and religion as a whole?

Religion's basically all about telling yourself "I'm going to be dead one day, so why not try to make myself feel better by making myself believe that I can make my death somehow worthwhile or in some way bringing about infinite joy and glory?", and then pulling a sort of Amway-type scam on this requirement for eternal joy.

Sounds like you really studied theology as a whole. Nice. Would love to read your book that singlehandedly debunked religion. Post more, I wanna see how thick, solid, tight your arguments are

Read Spinoza's Ethics, Hegel's Phenomenology of Spirit, Schopenhauer's The World as Will and Representation, and Kierkegaard's Fear and Trembling/Sickness unto Death to get the full explanation for the origin of faith, collective fear, religion, and the desire to reach unto the Absolute.
If you've got any alternative explanations for the reasons behind the existence of religions and religious dogma, please go ahead and elaborate as much as possible.

Wrong. Religion is about transferring your guilt onto a victim and shedding their blood in the name of a mysterious deity conjured up out of the netherworld so that you can continue living a debauched, ill-examined life free from your own pernicious conscience. Religious people are not afraid of dying, if only because no one is really afraid of dying. What terrifies people and what they project onto "death" is the secret of their own hypocrisy--the truth which they have buried but which they cannot totally expel from their consciousness. Once the secret, the truth is embraced rather than buried, death vanishes entirely--if you do not believe me, consider that people are not so much afraid of death as they are offended by it. Humility may not vanquish all fear, but it certainly leads to a greater peace with the realities of life. People are essentially offended that limits have been placed on their ego via mortality. This is why, profoundly, such people are really at war with the true author of the world, whatever or whomever it may be, who has penned our demise into the cosmos with inalterable ink. Thus, true belief, that is, faith in the will of the creator, and therefore, oneness with the order of the cosmos which includes the perishing of our bodies is the farthest thing from the religion of the masses, whose purpose is the very antithesis of faith in the author of the world. Such faith does not need to know or even believe in an afterlife, simply because it trusts in the justice of the totality of all things, even if it cannot see it, because the only alternative is to place the world on the Procrustean bed of our own fallibility, believing this amputated fiction of our own conceit to be the absolute and unvarnished truth.

Oh what an easy question to answer. If you want books that disprove religion start with the source. The Torah, The Bible, The Qu'ran are a good start there are more than enough inconsistencies to get the ball rolling on this. If you wanna go deeper on Christianity I'd suggest the Nag Hamadi scriptures which are the missing books that were removed from The Bible by Pope Constantine 1st. Makes you really question Christianity when the Gospel of Jesus is removed from it's holy book because it disagrees with the church. It's almost as if the church removed all teaching that opposed their solidification of power over their congregation on purpose.

So you've only studied late rationalization about a 2000 years old faith that tiself builds up on much older faith. That's like saying you understood the development of the empiricist mindset by reading reports of the Appollo space mission. You need to go way back in history. And you need to study anthropology.
