You use "he" when talking about largely masculine things (heroes, pilots, politicians, generals), and "she" when describing largely feminine things (weaklings, nurses, cheaters, soccer moms). Using "they/them" as a singular is a soiboy philosophy of trying to avoid gendering things in fear of appearing insensitive.
