Reading the whole Bible is required for literacy of the Western canon. Reading the Pentateuch (first five books of the Old Testament and the Torah) will give you a foundational understanding of Abrahamic religion. Reading the Gospels will give you a basic understanding of Christianity. The New Testament isn't that long, though. It won't take long to read the whole thing, and is quite interesting regardless of your faith and/or religious background.
I recommend the Geneva Bible, Oxford Annotated Bible or English Standard Versions. KJV is more of a standard for the literary study of the Bible. Newer versions are ostensibly more accurate.
