It's hard to say. The older you get, the easier it is to perceive what quality writing actually is, which means that you will throw away things that might be good if it is rewritten a couple of times.

Sort of, it could be a double entendre. First is the play on the garbage man, being the Penn Jillette meme, so calling him Gillette since he's a garbage man is a subtle allusion. Second since it is in fact the razor brand, if your character shapes up to be a very cunning writer, the razor allusion could be as if to say he was a very "sharp" man and writer, hence he is called inyimately by such a nickname.
