So I've been racking my brains if I should start an open degree at The Open University while keeping my job.
I'd do English and Philosophy / English and History but do not really know what I want do with it after 6 years of minimum study time.

My conflict is: Either spend all my time and money getting a degree of which I'm unsure what I'll do with it later or don't and work lousy odd jobs for the rest of my days unless a fucking miracle happens and I become published.

WWYD?

Wracking your brain is the idiom, not racking.

Friend of mine studied English and Philosophy at uni to avoid working shitty job for some years, without knowing what to do with it after 4 or 5 years. Now she has finished, can't find proper stuff to do with it, and has to work a shitty job. All she effectively did was take some time off the clock and collect some debt. If you're only gonna study to avoid working now, without a proper goal in mind, I'd really suggest at least thinking it over again. Maybe some other subjects?

No, I'd have to be working all the while to pay the fees. My hope is that I could maybe find some job that is actually interesting afterwards.

You have to take into consideration, then, wether you are gonna be able to tackle the workload of studying while working lots of hours on the side. I'm not too familiar with the system of The Open University, but I'd guess you can allot and arrange your time there a bit more flexibly than you would when having to physically go to uni, so that's a pro. Also I think more education is always better, and it can only improve your chances of finding a better job, compared to just staying in your old one, don't you think? Maybe do some research on what kind of positions you could fill in your country after doing English/Philo, and see how chances are in those areas. Worst that can happen is you have to do the same jobs you are doing now, after having wasted some time/money/effort. But you're gonna walk out a different and more educated person either way. And who knows what other kind of doors open up after you started taking courses, like finding new interests in areas of work you never knew you would fancy.

I appreciate your help. You're right, too. Thing is, I'm still afraid I might waste the second half of my twenties (I wouldn't be able to travel around for instance) for some vague future. Getting education is a prime goal, but I could get it for free.

Yeah I guess you can't have everything, but since you already considered making some rather drastic changes to get out of your situation, it sounds like current life in your mid twenties isn't exactly what you wished for. You can still travel when you're in your 30s desu.

What if you don't intend to study, but still avoid work?

I'm doing a local variant of the open university. I work 50 hours a week at some desk job + some evenings. I get by with studying about 1.5-2 hours on weekdays and 4 per day in the weekends. Usually I take Friday afternoons off though.

With my current pace there's six years of study. I'm doing Business Administration though, I'm not sure if I'd do all this effort if it wouldn't help me earn big bucks.

And yes there's plenty of time left for reading and shitposting.
