Bloom gets a lot of shit for being Jewish and (allegedly) a Freemason. I remember later in the book someone says that his name isn't even really Bloom, but a Hungarian name his he had changed. So he might be referring to that when he makes a signature, that he'll never use his "real" name.

I think in this context its more specifically meant to imply Bloom doesn't want his name attached to his deeds
