What exactly do you mean by "supply and demand"? There's obviously a supply of things and some sort of demand and that could mean different things.
If you mean marginalist price theory it's unfalsifiable since you can draw a curve to rationalize any possible price so that's "epistemologically" "problematic".
There's a lot of emperical work on how firms set prices and they all basically end up proving that most prices are administered in advanced economies... just look for the terms mark-up prices, average cost prices, full cost prices, normal cost prices, cost-plus prices in academic articles.
