Anyone here know any more books like these three?
The first is an anthology of western (majority Christian European, with a couple Islamic) sources discussing Buddha and Buddhism, dated from the second century AD to 1844.
The second is a collection of quotes and stories about Jesus from Sufi mystics.
The third is an anthology of texts from other religions (besides Christianity), also discussing Jesus.
There's not really a name for this type of book, but I call them cultural reinterpretation books. Any example of a foreign culture radically reinterpreting the more common story of someone or something (whether due to a different belief system or simple misunderstanding) is very interesting to me.

it unfortunately hasn't been translated, but there's a history book from Japan from 1861 which portrays the US founding fathers like they are Japanese legendary figures. Pic related is John Adams

Here you go. Christ the Etern Tao.
What else comes to my mind is the work of Paramahamsa Yogananda.
His Second Coming of Christ, a 2 volume, 1000 page long Yogic interpretation of the Bible.
His "Christian Yoga", a practical Yoga interpretation of the book of Relevation (not that much about Jesus tho). And his "Yoga of Jesus".
I know Swami Vivekananda also wrote spoke on Jesus. No full book but a Hindu view on Jesus from one of his lectures. Its a quick read. Here:
