It's to express the whole of the human condition, to portray the world around us, the world we wish existed. It's also in the pursuit of universal beauty in the sense that the great philosophers pursued truth and justice, these abstract ideals that are invisible but are most definitely there. At least with art we can at least conceptualize and visualize such beauty. At the bare minimum humans want to create things that look cool and we can gawk at.
